I’m Andrea, the founder of Carolina Spätzle.
The idea for Carolina Spätzle came from my determination to share Germany’s iconic noodle with as many people as possible! My family roots go back to southwest Germany, specifically to Swabia (Schwaben), birthplace of my parents and my parents’ parents and their parents’ parents (you get the picture). This area is also known as the birthplace of spätzle and it’s still the place to go to if you want the real deal. I grew up with spätzle— with lentils or goulash or baked with melted cheese and caramelized onions. Spätzle were a part of many special occasions, as well as everyday meals. And everyone seemed to love them.

I now live in North Carolina and feel lucky to live in an area filled with great food options, local farms, and people who love to eat all sorts of cuisine. No one seemed to be serving authentic Swabian spätzle. And yet, often when I mentioned spätzle, people responded enthusiastically, sharing memories of a great meal at a relative’s table, on a trip to Oktoberfest, or with fellow GIs at a local Gasthaus near their German army base.
